Pancakes with coconut milk – A yummy alternative to regular dairy pancakes

My kids wanted pancakes again but I was out of milk. Oh boy! Is there an alternative for cow`s milk? Coconut milk. At least the words ends in milk…It was worth a shot. Everyone was thrilled. Now we`re totally in love with our little coconut pancakes. It`s funny, they`re even better when they`re small. Try it! By adding coconut milk, you will turn heirloom pancakes into something to write home to mom about. And since we`re always experimenting with new things, this is our experiment of the week. It`s low risk, as nothing can go wrong. And there`s always room to satisfy that dirty little sweeth tooth`s craving!

For 4 servings you need:

  • 400 ml coconut milk
  • 250 g flour
  • 3 eggs
  • ½ tsp baking powder
  • 1 sachet of vanilla sugar or 1 vanilla pod
  • 1 tsp honey
  • 1 pinch of salt
  • butter for frying
  • berries and icing sugar for garnish

Put the ingredients in a blender and mix well. Melt some butter in a pan and pour enough dough to create paperthin pancakes. Fry for about 3 minutes on each side.

Garnish with berries and icing sugar.
