Beetroot Burger

Not your average burger!

When I was experimenting lately, I was hell bent on using beetroot. Why not just replace ground beef with beetroot? „This might turn interesting!“, I thought. And it got to be more than interesting. It turned out unique! YUMMY!!!

Again, I created an absolutely new taste sensation.

As always, this recipe is very simple, it just takes a bit of time, as the made from scratch bread is the icing on the cake, or the burger, in this case.

For 4 buns, you need (for 8, just double the recipe):

230 g flour

80 ml lukewarm water

1/2 cube of fresh yeast

1 egg

40 g soft butter

1 eggwhite

a pinch of sugar

salt to taste

some flour for kneading

For the beetroot patties you need:

4 preboiled beetroots

at least 150g rolled oats

200 g feta

1 onion

1 clove of garlic

salt and pepper to taste

1 tsp olive oil

2 eggs

2 tbsp basil leaves

For garnish (combine as you like):

lettuce

sliced mango

avocado

tomatoes

onions

sprouts

The buns:

Mix the flour with the crumbled yeast, the egg, the sugar, salt and the warm water in a bowl. Add the soft butter and knead up to 10 minutes with your wonderful hands and a whole lot of love! The dough will show its gratitude by rising above! Put the dough in a warm place, cover and and let it rise for about 30 minutes. I usually place it next to the heater, in summer, the suns`s warmth is enough. Form 4 buns, place them on a baking sheet lined with parchment paper and let them rise for another 30 minutes.

Preheat the oven to 180°.

Mix the wggwhite with a touch of water, spread the eggwash on the buns and sprinkle them with seeds such as sesame etc. as you like.

Bake for approximately 15 minutes, until they have browned to your liking.

Let them cool on a rack.

Beetroot patties:

Mix the beetroot, onion and garlic in a food processor. Add the egg, oil, oats, feta, salt, pepper and basil and pulse again. If the consistency is too runny, you may have to add a lot of oats when dealing with watery beets. Let the dough rest for 30 minutes, shape it into patties and sear them  with a bit of oil. Slice the buns and start garnishing. It`s great party fun. Dressed in shiny clothes, you will have maximum fun!
