A snack for warm summer days that seduces your senses!
I`m always one for little snacks inbetween. However, it should stimulate the senses.
On a warm summer`s day, I was overcome by a craving for avocado and graved salmon. The avocado, 2 slices of bread and some bittercress was all my kitchen was offering that day. I ran to my favorite fish monger, Seebald by Lake Starnberg and bought cold smoked salmon, marinated shrimps in oil and char caviar. There had to be a lemon aswell.
I was thrilled and so my little summer snack turned into a culinary event. Try it, it only takes 5 minutes!
For 2 people you need:
- 4 slices of dark whole grain bread
- 1 avocado, ready to eat
- about 200g cold smoked salmon or graved salmon
- about 50 g shrimps
- about 4tsp salmon caviar
- 1 lemon
Toast the bread slices. Cut the avocado in half, cut strips into the peel, carefully scoop out the cubes and arrange on the bread. As the avocado is very fatty, there is no need for butter. Put the salmon on it, garnish with the shrimps and the caviar and sprinkle with the lemon. Garnish the whole thing with the bittercress and voila your little culinary summer sensation is ready to eat!
