Sushi meets Bavaria!

cold smoked char
Salad with cold smoked char , ginger and wasabi

How to create something extraordinary with a few simple ingredients!

A few days ago, I was lusting for some sushi again. I had all the ingredients, but the main ingredient was missing. Raw fish! What to do? It was a Sunday. Everything was closed and my stomach was growling and screaming: „I want Sushi!“.  I set about to ring my neighbor, the fisherman, out of his house. He had cold smoked char  on sale. Why not? It tastes similiar to raw fish, just like graved salmon. I decided to create some kind of a salad.

Again, a fusion of cultures happened. What a wonderful mix! It`s easy to prepare and will infatuate  your senses!

And if you suffer from Sushi  attacks again and can`t get fresh fish at the spur of the moment, this is a fantastic alternative.

For 4 people you need:

  • about 800 g cold smoked char or graved salmon
  • 2 carrots
  • 1 bunch of radishes
  • 1 bunch of spring onions
  • 2 kiwis
  • 2 limes
  • candied ginger
  • soy sauce
  • wasabi paste
  • olive oil

Slice the char or the salmon across into very thin slices wih a very sharp knife. Sprinkle with lime juice. Slice the radishes and the carrots into thin decorative rounds and arrange beautifully on a platter with the fish. Slice the spring onions and the kiwis likewise and arrange on the plate. Sprinkle with olive oil.

Pour a little soy sauce into a small bowl and mix in about 1cm of wasabi paste. Serve candied ginger with it.

Fresh baguette always goes well with this.

Fast, simple and infatuating. What more can you ask for?

Have fun experimenting,

Yours truly,

Christina
