Healthy, yummie and fun – a quick recipe for unexpected guests

Cooking is the best anger management therapy!

A few day sago, I got so mad about a nagging neighbor that I could couln`t calm down. Totally loaded, I started throwing ingredients into a bowl and just stirring away.

This is how my cute little mini quiches came about.

Whenever I am angry or sad, I cook. This is how I turn anger or pain into creativity. Meanwhile, it`s become a no brainer.

And if anger creates pretty and yummie snacks, I guess it was worth it!

Just try it! As soon as something weighs heavy on your mind, pick up the wodden spoon. You will see, you will be immediately distracted, your anger will subside and something new comes into existance. You become creative. The first 2 or 3 times it may take a little overcoming, as the tempation to give in to pain or anger is very strong. But as soon as the 3rd time around, you will realize it has become a habit. You don`t need numbing. You will even be creative. And the best part about this is that you will be able to enjoy your treats just the way you like. It will soothe your soul.

 

For 4 people you need:

 

  • For the dough:
  • 200g flour
  • 150g curd queese
  • 80 g butter
  • a pinch of salt
  • For the filling:
  • 150 g cream cheese with herbs
  • 200 g curd cheese
  • pepper
  • nutmeg
  • 400 g cocktail tomatoes
  • 1 small zucchino
  • some freshly grated parmigiano
  • about 50g slithered almonds

Method:

Knead flour, curd cheese, butter and salt to form a smooth dough. Refrigerate for about 20 minutes.

Grease a muffin tin or a large quiche shell and line it with the dough. You can also use paper muffin liners.

Preheat the oven to 200 ° and prebake the dough for about 10 minutes.

In the meantime, separate the eggs. Mix the cream cheese with the curd cheese and the eggyolks and give it a hearty seasoning. Beat the eggwhites and fold them into the filling.

Wash the tomatoes and slice them lenghtwise. Chop the zucchini. Add the zucchini to the filling and spread it into the muffin molds or quiche shell. Put the tomatoes on the filling, round side up. Sprinkle with some parmigiano and some slithered almonds and bake for about 30 minutes.

If you feel like it, you can decorate the mini quiches with a few daisies.
